# How to Make It:

01 - Arrange 8 clear cups with 6 to 8 ounce capacity on a clean work surface.
02 - Dissolve red gelatin in 1 cup boiling water, stirring for 2 minutes. Add 1/2 cup cold water and stir. Distribute approximately 2 tablespoons into each cup.
03 - Position cups at a slight angle using a muffin tin to support them. Refrigerate for 45 to 60 minutes until completely set.
04 - Sprinkle unflavored gelatin over 1/2 cup cold water and allow to bloom for 5 minutes. Pour 1/2 cup boiling water over bloomed gelatin and stir until fully dissolved. Stir in sweetened condensed milk and cool to room temperature.
05 - Once red layer is completely set, gently pour white mixture over red layer, distributing approximately 2 tablespoons per cup. Set cups upright and refrigerate for 45 to 60 minutes until firm.
06 - Dissolve blue gelatin in 1 cup boiling water, stirring for 2 minutes. Add 1/2 cup cold water and stir. Allow mixture to cool to room temperature.
07 - Once white layer is completely firm, gently pour cooled blue gelatin over white layer, distributing approximately 2 tablespoons per cup. Refrigerate upright for at least 2 hours until fully set.
08 - Top each cup with whipped cream and fresh berries immediately before serving.

# Expert Tips:

01 -
  • They look absolutely stunning on a dessert table and people always assume they took way more effort than they actually did.
  • You can make them the day before, which means zero stress when guests arrive and you can focus on everything else.
  • The gelatin textures are so satisfying to eat, and that creamy white layer against the bright fruit colors feels special without being complicated.
02 -
  • Each layer must be completely set before you add the next one, and I mean completely, not just somewhat firm on the surface because a soft underlayer collapses under the weight of what comes next.
  • Temperature control is everything here, cooling each layer to room temperature before layering prevents melting the layer below and creates those crisp, defined stripes.
  • The muffin tin trick for angling the red layer actually works and prevents the awkward flat-bottomed cups that look less elegant when you serve them.
03 -
  • Use clear glass cups so people can see all three layers, because half the appeal is that visual wow factor, and opaque cups would completely undercut your effort.
  • Set a phone reminder for when layers should be ready because time disappears when you're cooking, and accidentally pulling something out too early derails the whole process.
